A nuanced, sparkling cider with a delicate nose of white pepper, lemongrass, and lime. Herbaceous notes of freshly dug wild carrot, finishing with mouth-watering tannins. From the bumper crop year of 2015, these apples were picked September 15th through November 1st. A remarkably long aging process creates this cider’s unique complexity. It is first aged in stainless steel and neutral oak barrels for one year. Then it is aged for another 15 months in the bottle on secondary lees. Very few ciders are aged for over two years. This is a rare and special experience.
