After stumbling across a grove of wild crabapples laden with fruit of all sizes, shapes, and colors, we carefully blended their tart, tannic flavors with a mix of unsprayed apples foraged from the environs of Hadley, MA and beyond. The result is a bone dry, sparkling cider that is brightly acidic with well balanced tannins and a touch of bitter. Wild-fermented, it is dry, fruity, clean and bright.
