Despite being temperamental and hard to grow, Kingston Black apples are nonetheless considered among the best for making single-varietal ciders. The apple itself has tremendous character and balance, enough to create a nuanced cider on its own. Our Kingston Black Single Varietal is offered as part of our Reserve Series. This subtly sparkling, dry cider is barrel-aged and presents a beautiful balance of burnt sugar and vanilla flavors atop green apple, melon and grape notes.
85% Kingston Black, 10% Manchurian Crab, 5% Blend of Bittersweets apples
Roast duck, pork loin, charcuterie. Hard cheese. Vanilla custard.
These apples are hand-picked, washed and pressed using our old-school rack and cloth press. Barrel-fermented and aged, using only the native yeast found on the apple skins and flesh.
