Dry and fruity, this unique wild-fermented cider is a blend that features the legendary Golden Russet apple as the star of the show. Pleasantly refreshing, this cider balances moderate tannins with a delicate sugar cookie mid-palate and unexpected notes of anise. Subtly sparkling and surprising, it’s a delicate and delicious cider year-round. Since it is on the lighter side, it lends itself well to cider cocktails. Try adding a splash of a fruity simple syrup (strawberry or rhubarb, perhaps) and a sprig of mint over ice and you have a perfect summer sipper.
Approximately 50% Golden Russet apples. The rest is a blend of Macoun, Goldrush and a little Dabinett.
Balances spicy foods brilliant. Also delicious with fresh cheese and crackers, fish, and poultry dishes.
We wild ferment our ciders over the cold winter, slowly and to full dryness. We know from experience and tradition that this allows the unique qualities of the juice to really shine through in your glass. We never add sugar, flavors, or sulfites to our ciders - they are alive!
