Foxwhelp is a dry, sparkling single varietal, estate cider. It has the rich earthy flavor you expect from a bittersharp cider apple along with a deep golden color and soft tannins. Look for complex notes of savory herbs, brioche and apple peel. The aroma is pure fall orchard and the flavor is dense with fruit, caramel and spice.

Vintage: 2016. Single varietal Foxwhelp. Our bittersharp Foxwhelp trees were planted in 2003 and were grown organically under our low intervention techniques. These beautiful apples are the size of soft balls (!), are great for blending and make this spectacular single varietal.
This cider pairs well with most any meal. It can stand up to the heartiest and spiciest of dishes with spice and chili, but can be delicate paired with salad and seafood.
This cider is best served at about 45 degrees. We age the Foxwhelp apples for several weeks to soften the acidity before pressing, then ferment the cider slowly with champagne yeast. We let it mature in stainless steel for 12 months. No filtering or fining agents are used.
